Richard's Marinated Ribs
Ingredients:
Spices:
45g fennel seeds
5g cumin seeds
5g coriander seeds
45g black peppercorns
Marinade:
1 onion peeled & grated
1 green bell pepper chopped
1 green chilli chopped
1 head garlic peeled & grated
100g ground spices as above
100ml vegetable oil
100ml smoked chipotle tabasco
100g english mustard
100g Pig Rub or Mldon sea salt & pepper
100g maple syrup
100ml black strap molasses
400g apricot preserve
400ml apple barbecue sauce
Method:
1. Roast spices until golden then blend to a powder
2. Sweat the onion, garlic, pepper and spices in the vegetable oil for five minutes
3. Blend with the remaining ingredients and reserve
4. Massage the ribs with the marinade and place on a shallow roasting tray, uncovered and roast on a low heat (120 oC) for 4 hours
5. Remove and cut the ribs into portions, reduce the cooking liquid by half and baste liberally again
6. Heat a grill or pan and sear the ribs until coloured all over
7. Tuck in and enjoy!
