Recipe

Proper Chilli

Ingredients: 300g ground beef, 150g pork belly cut into 1cm cubes, 20ml smoked tabasco, 1 tablespoon olive oil, I large onion chopped, 3 cloves of garlic chopped, 1 green chilli de-seeded and finely chopped, 1 tablespoon white wine or cider vinegar, 400g tin chopped tomatoes, 100g tinned kidney beans drained and rinsed, 1 small piece of cinnamon stick, 1 small bay leaf, a pinch of dried oregano, half a tablespoon smoked paprika, salt and freshly ground black pepper.

 

Serves 4

1. Heat the olive oil in a heavy bottomed pan.

2. Brown the ground beef and pork belly, then remove and set aside.

3. Add the onions and sweat over a low heat until soft.

4. Return the meats to the pot and add the rest of the ingredients except the beans and bring to the boil then turn down and simmer.

5. Simmer gently stirring regularly for 1 hour and 20 minutes.

6. Add the kidney beans and , bring back to a simmer for 5 mins.

7. Take out the cinnamon stick and allow to cool for 10 mins.

8. Serve with long grain rice.
